Peanut/Almond Butter Cookies
Ingredients
1/2 cup (total) Peanut Butter and/or Almond Butter
1/2 cup Butter, softened
1/2 cup Granulated Sugar
1/2 cup Brown Sugar
1 Egg
1/2 tsp Vanilla
1/2 tsp Baking Soda
1/4 tsp Salt
1 1/4 cups all-purpose Flour
Directions
Using your Kitchen Aid mixer, combine softened butter and peanut butter. Mix on speed 6 until whipped smooth, About 1 min. Scrape bowl, Add sugars, egg and vanilla. Beat for 1 min at speed 4.
Scrape bowl and turn to Stir speed. Add Baking Soda, Salt and Flour 1/4 cup at a time. Stop and scrape bowl.
Using a small cookie scooper, place balls on a large ungreased baking sheet 1/4 inch a part. They wont expand much.
Bake at 375*F for 10-12min or until golden. Remove from sheets and let cool on wire racks.
