Any Berry Scones

I've made these twice already and now that I know they are a BIG hit I can give you all the recipe. The first time I made them it was with blueberries and almonds. The second time was with strawberries. Both were awesome. On to the food...


Ingredients

2 cups all-purpose flour

1/2 cup granulated sugar

2 1/2 tsp baking powder

1/2 tsp ground cinnamon

1/2 tsp salt

1/2 cup  butter, straight from refrigerator 

1/2 cup soy milk

1 large egg

1 tsp vanilla extract

1 cup of blueberries or chopped strawberries

Optional: coarse sugar for sprinkling on before baking, and chopped almonds

Glaze

1 cup confectioners sugar

2-3 tbsp water (or a little more depending on your preference)

1/4 almond extract or lemon extract

...makes 50 bite size scones


Directions

I hate when recipes tell you to preheat the oven but they don't consider the time you spend prepping and its on for an extra 40min. 

  1. Cut stick of butter into tbsp (or smaller) slices. Add to a large food processor with flour, sugar, baking powder, cinnamon and salt. Pulse for about a minute or so until it resembles a coarse meal. **If you have a cover put it on to contain the flour mess. If you do not have a large food processor add dry contents into your stand mixer and grate a frozen stick of butter into the bowl or you can use cold butter and thinly slice it with a knife and add. Mix it with your hands or stand mixer. Food processor works best though.

  2. In a small bowl whisk milk, egg, and vanilla. Pour the wet mixture into flour mixture and toss with a spatula until everything is moistened. Mix in berries of your choice and almonds (optional). DO NOT OVER WORK THE DOUGH. The dough should be a little wet.

  3. Preheat oven to 400F. Prepare a baking sheet or use parchment paper.

  4. Pat your hands with some flour and start rolling the dough into little balls or you can use a small ice cream scoop which is much easier. Place the balls onto prepared baking sheet. The dough wont expand much so you can line them up close together leaving an inch between or so.

  5. Top with coarse sugar and bake for 20min or until golden brown.

  6. Take out of oven and let stand for a minutes before transferring to cooling rack. Repeat until dough is finished.

  7. Mix ingredients for glaze and add on top of scones once cooled

**These never lasted more than a weekend because they're great for snacking. If you need to reheat, use a toaster oven or micro for 10 seconds.
