Baked Buttermilk Donuts
After 1 failed attempt back in 2016 I vowed NEVER to make donuts again. My husband and I were craving apple cinnamon donuts, so I had the brilliant idea of making some ourselves. This consisted of a very complex recipe of dough, rising, chilling, frying and urgh! Needless to say there can only be 1 cook in the kitchen. ME!
So, in honor of National Donut Day I decided to make a baked version. I don't know, but frying seems like way too much work for me right now. Plus baked is much healthier. This recipe is made with homemade Buttermilk (bc hubby didn't want to go to the market for me) and Cinnamon Sugar topping. Of course you can choose any topping you want but I'm craving cinnamon.

Ingredients
Buttermilk
3/4 cup of whole milk
1/2 of juiced lemon = 2 tbps or so
Batter
2 cups All-Purpose Flour
3/4 cups Sugar
2 tsp Baking Powder
1/4 tsp fresh ground Nutmeg
1sp Salt
3/4 cup Buttermilk
2 eggs, beaten
2 tsp Vanilla Extract
2 1/2 tbsp Coconut Oil, melted
Directions
Make the Buttermilk. Pour 3/4 cup of milk and lemon in a small bowl or cup. Stir. After 5min it will start to curdle and thicken. Set aside.
Preheat oven to 325 degrees and prepare baking pan if necessary. I use the Norpro mini baking pan and I find that It does not require "preparing". The donuts just pluck right out.
In a large bowl, mix flour, sugar, baking powder, nutmeg and salt
In a smaller bowl, beat eggs, your buttermilk, vanilla, melted coconut oil. Whisk until smooth
Combine the wet with the dry ingredients and mix well. Fill up each donut hole 1/2 full. I like to use a small ice cream scoop.
Tap down the tray onto the table to even out the pan. Bake for 10-13min until slightly golden. Do not over cook or they will dry out. But everyone has a different preference.
If using a Norpro pan, you can just pluck them out with your fingers, contents will be hot but you don't want them to cook anymore. Transfer donuts onto cooling rack.
Sprinkle Cinnamon Sugar on top of warm donuts, flip and sprinkle again. Some like to put the donuts in a paper bag and shake them around to coat, but I find they break apart.
