Chicken and Turkey Pot Pie Please
One of the best meals my husband has ever eaten, to date. He added this to his list of favorite things to eat. Served warm, this hearty meal is sure to fulfill every craving you have, sweet and savory. It doesn't even have to be a winter meal bc who honestly eats dinner cold? It's not a soup, it's a pie!

Ingredients
1 lb Ground Chicken, I used 93% lean
1 lb Ground Turkey
2 Celery Stalks, chopped
2-3 Large Carrots, chopped into little pieces (I quaterd the slices)
1 small Sweet Potato, chopped into little pieces
1 small Acorn Squash, peeled and chopped into little pieces
1- 15oz can of Sweet Corn
1-15oz can of Sweet Peas
1 Red Onion, chopped
1 Shallot, chopped
2 Garlic Cloves, minced
2- 10oz cans Condensed Cream of Mushroom Soup
1 package of Pie Crust, (Pillsbury comes with 2 crusts)
Smoked Paprika, Salt and Pepper to taste
Directions
- Finely chop all the vegetables- Celery, Carrots, Sweet Potato and Acorn Squash, into little bite sized pieces. Idea is that you want to be able to fit it on a spoon. Chop Red Onion, Shallot. Mince Garlic.
- Bring a medium sized pot of salted water to a boil. Add Celery, Carrots, Sweet Potato and Acorn Squash, boil for 10min. Drain, set aside.
- While the vegetables cook, mix together meat in a large bowl. Season with salt, pepper and a few dashes of smoked paprika (optional). In a large saute pan, over medium heat saute Red Onion until slightly pink. Add garlic and saute for 1 min, until fragrant. Add ground meat and saute until cooked through and juiced run. Turn off heat. Season with salt and pepper.
- Empty cans of Corn and Peas in a strainer to rise. Add all the cooked vegetables to the meat- corn, peas, celery, carrots, sweet potato and acorn squash, stir to combine.
- Preheat oven to 425.
- Use the same pot as the cooked vegetables were in, add both cans of cream of mushroom. Trying to get it all out of the can, add 1 can of water to the pot. Mix and bring the pot to a slight boil but avoid burning at the bottom.
- Take out your casserole dish (mine is 9x13), you can use 2 pie dishes or whatever you have on hand. Add meat and vegetable mixture to the bottom, make sure its even. Using a ladle, spoon the cream of mushroom evenly over meat and vegetables to its all covered and looking delicious. Layer the pie crust over the dish. Depending on what you use, you will have to cut up the second pie crust to make it fit evenly. Slightly score the crust with a knife in any pattern you want.
- Bake for 40min or until crust in golden brown. (I put it under the broiler for 2min to extra crispiness)
- Rest for 10min before serving
