Chicken Sausage Gnocchi w/ blistered tomatoes and kale
As a kid, the most requested meal was this pasta and sausage dish mom used to make. Sauteed caramelized onions and peppers in the juices from the sausage, made every bite my absolute favorite. It is now my sisters favorite and my husbands most requested meal. I wanted to try the same method using what I had already in the fridge. Here we go...

Ingredients
4 Chicken Sausage Links, plain
1lb of Fresh Gnocchi
1 pint Cherry tomatoes
1/2 Spanish Onion, sliced
1/2 Red Onion, sliced
1 Shallot, sliced
4 Mushrooms, sliced
Handful of Chopped Kale (or Spinach)
Directions
- Thinly slice onions longways. Halve and slice mushrooms. Wash and Dry produce.
- Bring a pot of salted water to a boil. Cook Gnocchi as per directions. Drain.
- In a medium/large skillet (i used non stick) cook sausage over medium to high heat. Turn every 3 min until nicely browned, blistered and cooked through. Remove from pan and let rest for 5min. Halve the sausage longways and slice. Set aside.
- In the same pan, saute onions in chicken juices until translucent. About 5min. Add sliced mushrooms, saute for 2min until glossy. Add tomatoes and cook COVERED for another 2-3min until blistered. Add sausage. Mix. Add Gnocchi and a handful of Kale. Turn off heat. Toss everything to coat.
- Salt and Pepper to taste
