Chicken and Broccoli
Another Chinese Classic for an easy week night meal.

Ingredients
Canola Oil
8oz chicken breast, cut into bite sized pieces
2 tbsp ginger
1/8-1/4 tsp red pepper flakes
1/4 cup cashews (or peanuts)
1 red onion, sliced
1 medium carrot, thinly sliced
1 cup broccoli, cut into little trees
1 few stems of Enoki Mushrooms (found at oriental grocer)
1 1/14 cup chicken broth
1 tbsp Cornstartch
Another 2 cloves garlic
Soy Sauce
Directions
Combine garlic, ginger and red pepper flakes in a small bowl. Place chicken in bowl to coat and set it aside for 30m,
In a wok or large skillet, drizzle oil over med-high heat. Add nuts and cook until slightly browned. Remove and set aside.
Add chicken contents to pan/wok and saute until cooked, 3min depending how big you cut the chicken. Remove and set aside.
Add another drizzle of oil, saute onion, carrot and broccoli for 2min. Add 1/4 of broth and bring to a slight boil. Cover and cook 2min until broccoli is tender.
Combine remaining 1 cup of broth with cornstarch and whisk until dissolved. Add cornstarch mixture, chicken, enoki mushrooms and garlic to pan. Saute for 1min until sauce thickens.
Serve with noodles or rice. Top with peanuts and a drizzle of soy sauce.
