Banana Nut Bran Muffins

Ingredients
1 1/2 cups wheat bran
1/2 cup milk of your choice
2 medium bananas, mashed
1 egg
1 tbsp coconut oil, melted
1 1/2 tsp vanilla
1/2 cup honey
1 cup whole wheat flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/4 tsp nutmeg
Pinch of salt
Chopped walnuts
Directions
In a small bowl, combine wheat bran and milk and let soak for about 10min.
In a medium bowl, combine mashed bananas, egg, coconut oil, vanilla and honey.
Using your stand mixer, combine the flour, baking powder, baking soda, cinnamon, nutmeg and salt.
When the bran mixture is ready, stir into the bananas mixture and then add to the flour mixture until just combined. Fold in walnuts.
Divide evenly into muffin tray and bake for about 15min or until toothpick comes out clean. Allow to cool in pan for 5min before transferring to a wire rack.
