Cashew Beef
So easy your husband can do it :)
….Serves 2
Ingredients
2 tbsp cooking oil
8 ounces beef (flank, skirt, sirloin) cut into bite sized strips
3 tbsp Oyster Sauce
Mini red and green peppers (as much as you want) cut into thin strips
1/2 cup celery stalk, sliced into thin half moons
1/2 cup carrot, sliced into thin slices
1 handful Enoki Mushrooms (can be found at your oriental grocer)
2 tbsp soy sauce
1 chives, sliced
2 tbsp cashews toasted
1 tbsp chili garlic sauce or sriracha
Cornstarch (optional to thicken sauce)
Directions
Heat wok or skillet over high heat. Add oil, beef and Oyster Sauce; cook until beef is half done.
Add peppers, celery, carrots and soy sauce; stir-fry until vegetables are tender. 2min or so. Stir in chives, enoki and cashews. Cook for another minute. If you want a thicker sauce, add cornstarch 1 tsp at a time.
Add Chili sauce on top and serve with noodles or rice.
